Ingredients
- 1 large Yellow Onion, peeled and chopped
- 2 large Carrots, peeled and chopped
- 3 med. stalks Celery, chopped
- 4 cloves Garlic, peeled and minced
- 8 cups (2 L) Low-Sodium Vegetable Stock
- 2 tbsp. (22 g) Nutritional Yeast (Completely Optional)
- 28 oz. (800 g) canned Diced Tomatoes
- 2 tsp. (2 g) Dried Oregano
- 2 med. Red Potatoes, diced
- 4 cups (270 g) Baby Kale
- 1 large Zucchini, diced
- 1/2 cup (100 g) uncooked Brown Rice
- 2 15 oz. cans (900 g)Cannellini Beans, drained and rinsed
- 1 tsp. (6 g) Kosher Salt
- 1/2 tsp. (1 g) Black Pepper
- 1 cup (20 g) fresh Basil, chopped
Instructions
- Put a large pot over medium high heat.
- Add onion, carrots and celery. Cook in the dry pan for 10 minutes. If vegetable start to stick add a few tablespoons of water to the pot to loosen them up. (This saves on using oil)
- Add garlic to the pot, stir and cook another minute.
- Add stock, nutritional yeast(if you're into that), tomatoes, oregano, potatoes, kale, zucchini and rice. Stir to combine
- Bring pot to a boil over high heat then reduce to medium low and simmer for 30 minutes.
- Add beans to the soup and stir. Cook for an additional 15 minutes.
- Season with salt and pepper. Adjust to your taste
- Add basil right at the end and stir in well.
- Enjoy.
