Zippy Cole Slaw
This recipe got its start with my maternal grandmother. She had brought cole slaw to thanksgiving one year. I put it on an after dinner sandwich, and that, combined with the other sandwich components, created one of those perfectly addictive combinations that all the fast food companies are searching for. I knew that I had to have this cole slaw again if I was ever going to achieve that flavor sensation. This lead me to call my grandmother and ask for the recipe. To my dismay (as at the time I was not the most creative of cooks) her recipe had a hard base, but the flavorful ingredients were flexible measurements. I set out, therefore, to recipe test until I got the exact proportions for my optional slaw.
I was later informed by my uncle that I make it wrong compared to my grandmother, and he favors the slaw more creamy and less vinegary. I like the pop that the amount of vinegar gives (and my mother agrees), but if you’re like my uncle and not as into the pop, then use half the amount I recommend. Zippy Cole Slaw
Ingredients
- 1 cup (240 mL) Sour Cream (or Greek Yogurt)
- 1 cup (240 mL) Mayonnaise
- 1/2 cup (120 mL) Apple Cider Vinegar
- 1/4 cup (50 g) Sugar
- 1 1/2 tsp. (9 g)Kosher Salt
- 1 tsp. (2.5 g) Ground Black Pepper
- 1 large Yellow Onion, chopped
- 1 bag (14 oz./400 g) Tri-Color Cole Slaw Mix
Instructions
- Whisk together sour cream, mayo, vinegar, sugar, salt and pepper in a large bowl until smooth.
- Add onion and cole slaw mix to the bowl and stir until evenly combined.
- Refrigerate at least 1 hour or overnight before serving.
